Hi there! I am the Kelly behind the Clean Eats. I have long held a passion for both nutrition and cooking and I am truly blessed to have been able to translate that passion into not only a business, but a way to serve my community.
Eating healthy shouldn't feel like a sacrifice. You can eat your veggies and think they taste good too. Trust. Our brains are hard wired to prefer highly-palatable foods (a survival instinct from our hunter/gatherer ancestors), which is why it is so important to properly flavor your food!
In the last 15 years, I have eaten: Paleo, Whole30, Keto, vegetarian, AIP protocol, juice cleanses and counted macros. I also graduated from a holistic nutrition program, and have taken numerous subsequent Master Classes on both nutrition and cooking. These meals are a result of all of that trial and error and education.
My meals are all gluten-free, dairy-free and soy-free. So many of us are either allergic or sensitive to those items that I think we'd all feel better if we ate less of those (and more protein and veggies).
Quality matters. That's why I buy organic produce and seasonings. I also buy organic animal protein, grass-fed beef, range-fed chicken and heritage breed pork whenever possible.
Similarly, I cook with EVOO, ghee and coconut oil because they are stable fats, not subject to the same oxidative stress (i.e. way less toxic) during the cooking process.
I love to use citrus, herbs, vinegars and umami boosters like coconut aminos and fish sauce to pack my meals with flavor.
I also cook with infused EVOO, coconut oil and ghee because the fats we cook with season our food too. It's an ingredient!
I don't add sweeteners to sauces and dressings, etc. I do occasionally use honey or maple syrup in my baked goods but those will be noted in the description. I am of the opinion that if you need to add sugar to a savory dish, then your food hasn't been adequately seasoned.
